this month, cocoa is the ingredient of choice.  I'm always amazed how chocolate plays a part in recipes.  of course, there's the dessert--brownies, cakes, cookies.  But, it is also the main element to many entrees', stews, and chili,s; and, the base to a wonderful dish featured in this month's recipe--beef medallions in rosemary sauce.  serve this delectable dish with wild rice, or garlic mashed potatoes, steamed asparagus, or an easy salad.  that's it...easy, elegant, and delicous!  perfect for a romantic dinner on...

beef medallions in rosemary sauce

 

 

recipe:

 

beef medallions in rosemary sauce

1 lb beef tenderloin

2 tablespoons butter

1/2 teaspoon cocoa

1/8 teaspoon salt

1 clove garlic, minced

1/4 teaspoon dried rosemary leaves

1/4 cup dry red wine or beef broth


directions:

cut tenderloin into 3/4-inch slices.  heat 1 tablespoon butter in skillet over medium-high heat.  saute' beef slices in butter for 4-5 minutes on each side, turning once, until brown and center is medium rare.  remove beef to warm platter; keep warm.

 

cook and stir 1 tablespoon butter, the cocoa, salt, garlic and rosemary in same skillet until bubbly.  gradually stir in wine.  heat to boiling; boil and stir 1 minute.  serve over beef.
